you need a keel to track in the wind. A rudder may help but only one one end of your craft.

Looks like an old Minn Kota, my pops used to have one. You might think of using a motorcycle sized gel cell battery to aid in your slow speed needs...then just use the big one to get where you're going and do the old switcharoo. Something similar to this

Except one that has more substantial terminals so you don't get too much resistance on those little tabs...

Trolling the buckets or a "sea anchor" can be the way to go. Experiment with it and report back how you do. I find switching the trolling motor off and on off and on to be a pain in the rear.
