My niece calls me from New York and asks me if I did peaches this year.I told her that I didnt this year.Canning peaches is a major job, and I didnt feel like going through all that labor.She told me she was sad that I didnt make any.Especially since she bragged on them to her fiancee.What kind of uncle would I be if I didnt make her some.So now this weekend I know what I'm doing.

Shes correct in on way .Home canned Peaches are the best.They taste so different then store bought chemical peaches.This is another home canning project that is very good to do with children.Kids love fresh canned peaches as do adults.

Try making some.Another really good home canning project are canned pears.MMMMMMMMMMM.I use to do regular and spiced pears.Here comes fruit season now.Im glad I got my fishing and crabbing in last weekend.This year I'll most likely can Peaches,Pears,Pear sauce and Apple sauce.I had to do more canned fruit since my molars were taken away.

Alright racfish....I sent you my pickled egg recipe....now i need your cinnamon pear recipe. It just happens I have three HUGE pear trees in the yard...and I love cinnamon and I love pears...


oh yeah...and what to do with the two hundred+ plums i just picked Wednesday??

Make plum butter or plum cheese.What you do is boil the plums in water to soften them.Put them through a food mill.Take the pulp and boil the water from it on a low heat(almost a simmer).Cook it for hours.Once you drag a spoon through it and it parts like the Red Sea (moses)Add a few tablespoons of sugar and recook.Sugar will at first soften it but will eventually make it thicker.Pour finnished product in a foil pan sprayed with non-stick spray and let harden.Slice it like a Dulce(candy) in 1x1 squares.Serve as an after dinner dessert.Fruit after a meal always helps with the digestion.The Spanish make a similar Dulce. Its called Membrillo which is Quince cooked the same way.
If you dont cook the plums too much as you do for the cheese.Put the plum mixture in jars and seal them.It makes plum butter much like apple butter.Great on toast or even on chicken or ham as a coating to use before cooking or during.Remember its a plum(prune) so dont eat too much before fishing.Hahahahaha or Montezumas Revenge will git ya.

Im trying the eggs this wekend.Bass fishermen beware!!! Im eating pickled eggs on my toon.No lighting up near me.

I dabble in all kinds of stuff BB.Life is short and I like experiencing things.I have to admit that I'm off a few weeks in my production so it was Pesto this weekend with Blackberry jam.Next weekend is Peaches and eggs.Darnit !!!I need longer weekends.
