Someone gave me 3 large chunks of frozen albacore tuna. The only tuna I have had comes in cans. Or the one time someone was given home canned pints of tuna they didn't like and I did. Otherwise I have never cooked tuna. So I googled it and looked on forums and grilled (barbecue) one chunk and smoked the other 2 chunks.

OH MY GOSH IT IS SO GOOD. I had no idea.

for the last couple years i've been smoking tuna while overseas working. like you, i never knew what i was missing til i started smoking it. i've always been a big fan of smoked salmon and trout, but the smoked tuna is off the charts in my book. i like the fact that you can use the simple universal dry brine recipe, or go with a wet brine and tweak to taste. the results are amazing. there's an awesome YF tuna recipe i got off of "bloodydecks.com" that i use as a base.
fishing may not be life, but it's a great alternative

I just used my dry brine that I use for salmon but did it for less time and it smoked in less time. I just didn't know it was good for anything but sandwiches.
When I grilled it I did it like I would for salmon seasoning wise but on high heat.

I like my tuna seared on a hot skillet rubbed with hot chilli oil. I just barely sear it so its still almost raw in the middle.Then I garnish it with Wasabi and preserved ginger.This is my most preferable way to eat tuna.
When youre up to your rear end in alligators,its hard to remember that the initial plan was to drain the swamp.

yep. i cut it into pieces about 1"x2" and smoke it for about an hour, depending on ambient temp. sprinkling the pieces with lemon pepper while drying before it goes in the smoker. gives the outside an almost seared texture but still leaves the inside moist and tasty. almost any fish is excellent fresh, and i'm thinking (at least for me) that just recently getting into the pleasures of eating this fish in a varity of ways makes it my new favorite.

Toni it is great, if you really want the best though you need fresh and the best way to get fresh is to catch it yourself. Charters out of West Port aren't cheap but well worth the money. I can help you out with some charters if you ever want to get on one and I would recommend a 6 pack charter as they are day trips and if the fishing is fast and hard then most will stop and hit salmon on the way back in.

Fresh tuna sashimi is simply to die for. I love it. I also love it beer battered and fried.

This was sport caught frozen albacore. Thank you Scott for thinking of me and the charters...I would love to do it but it looks like finances this year are going to be very tight.

Take your fresh raw tuna and cut it into small chunks about the size of two dice put together. Mix this recipe together and soak the tuna in it and eat it raw. It is freeking awesome! Its a great appetizer.

3 tb soy sauce
1 tb chinese cooking wine (or sherry)
1/2 tsp sugar

1/2 cup chicken broth
1 tsp sesame oil
1tb sesame seeds

Another twist to JBS recipe is I cube it the same rub it down in coarse kosher salt. Let it sit in the reefer for 48 hours.Rinse well and place in a jar. In that jar goes olive oil ,orange juice,lemon or lime juice ,garlic. Let sit and eat as an apetizer.
