Mango Jam

I just made Mango jam. Mangos are cheap right now and it makes great jam or jelly. I follow the peach recipe in the Pectin box. I use the low to no sugar pectin. Mine has 1.5 cups of sugar.Not bad even for a diabetic. Its my mothers favorite.How could I ever say no to mom after what I put her through for 57 years. LOL....

I like to make a mango jam recipe but I put a couple of roasted jalapenos in it, giving it a nice savory spice to it. I canned a bunch of it for christmas presents last year, it was a real hit with everyone.

I made Peach preserves last season using Jalapenos I grew. The heat was there but the flavor was off. I found it to be a nice glaze for pork. It wasnt that good on my Eggos or toast.I'm using a new pectin made by the "Ball" company. Usually Id use 4 cups of fruit to 8 cups of sugar. Now I use 8 cups of fruit to 2 cups of sugar.To me I know get a more robust fruit taste and plus it eases up on the sugar usage.
