Trout Liver?

While filleting 2 limits of rainbow yesterday, I pulled a liver out and thought, wow, looks a lot like a chicken liver only smaller. My wife enjoys liver, me, not so much, but they looked really healthy. So, on a whim, I removed the liver from the next 3 trout, carefully cleaned them, removed connective tissue, rinsed and drained them. My wife melted some butter and after patting them dry with a towel, she pan fried them. I ate one and it wasn't bad at all as far as liver goes, with just a hint of fish taste to it. My wife said they were good, but not really worth the effort in her opinion. Maybe if they were sautéed with some diced onions.... [wink]

I'm thinking, burbot bait... or a pate'... But now I'm really hungry for liver and onions, garlic..... of the bovine variety. ;)

Did it taste like plain ol liver? Or did it taste fishy?
