This weekend I managed to put up my Red Pepper Jelly.This is a great jelly for turkey on T day.I use it on pork and chicken also.The recipe is as follows.
5 cups cane sugar
6 oz pectin or powder type.
6-8 whole cloves
2 red peppers
2 green peppers
4 jalapenos
2 habeneros
1 tblspn salt
1 cup cider vinager
1 large yellow onion
2 teaspns of red pepper flakes
juice of 1 lemon
In a cuisinart or food processor fit with a steel blade ,add onion,peppers,and 1 1/2 tespoons of salt.Put this all mixed up in a collander in the refer overnite to drain the juices.(wear rubber gloves while doing work with peppers)the salt will help extract the juices.In the morning press the mixture using a plate getting rid of some more juices.Put this mixture in a 4 quart pot and add salt ,vinager,lemon juice and bring to a boil.Add sugar and boil till it wont stop ,then 1 minute full rolling boil.add cloves to the mixture and ladle into hot sterilized jars and steam or waterbath for 12 minutes.let them stand overnite at room temp.This jelly can sometimes take 1 day-3 weeks to set.(depending on how juicy it was)Not only is it delish but makes an excellent something special to take to your host or hostesses house as a gift.
