Smoked salmon pancakes.
Make the pancake batter. Add smoked salmon to the batter. I put the salmon in a blender to break it up. It becomes fluffy. How much depends on the amount of batter and how heavy of smoked fish flavor you want.
Top with melted butter and maple syrup.

On my eating regiment Pancakes are not on the list unfortunately.This sounds like it could be good.Im willing to try new things.We as creatures of habit need to learn different ways to eat foods.I learned as a kid to eat oatmeal with grated Parmessan or grated Romano in it. Its very good.After all we put brown sugar in our salmon brines.Why wouldnt maple syrup be good.Sometimes I add Maple wood to my smoker.Im gonna try this with a egg sunnyside up on top of it.I will make my pancakes out of a whole wheat flour though.
When youre up to your rear end in alligators,its hard to remember that the initial plan was to drain the swamp.

I don't know about wheat either. It might be better than the pancake mix I get at Winco.
My grandmother use to make corn cakes. Just some cream corn in the pancake mix. I love it. My kids do not.
So, rac, you and I can look at pancakes differently. Not just a sweet item even though I put maple syrup on mine. Putting cheese on the smoked salmon pancakes may make it even better.

5 oz of smoked salmon(preferably hot) 2/3 cup mayo 1/3 cup sour cream 1 cup of parm 2 tsp lemon juice 3/4 tsp of Worcestershire (I like 1 tbs) 3/4 chopped dill 1/8 tsp white pepper 1/8 tsp of Tobasco and pinch of salt 2 tblsp melted butter Pinch of paprika and some dill sprigs.
cook at 350.
Preparation: 1. Stack 2 crepes with 2 2/4 to 3 inch round cookie cutter
2. Remove bones and skin from salmon and break into fine pieces. In bowl mix mayo, sour cream, 1/2 cup of parm, lemon juice, Worcestershire, chopped dill, white pepper, and tobasco. Stir in salmon.
3. Mound 1 1/2 tsp of salmon filling on one half of each crepe - fold into moon shape-
set crepes slightly overlapping in buttered baking pan - drizzle with melted butter and sprinkle rest of parm and paprika.
4. Bake until golden and bubbly, garnish with sprigs.

Toni I posted somewhere else a recipe for Smoked Salmon Omelet.I've made and eaten it before. I used a Nova Scotia style lox for that but even Kippered Salmon and eggs are great.
To go even further in sweets with salmon. When I traegerize my salmon I drizzle honey on the salmon a couple times through the cooking/smoking process. Its very good. It adds a candy like glaze on the fish.Also added on that is hot red pepper flakes.Ive had Salmon Crepes,Smoked Salmon Crepes and Salmon roe crepes.All are delicious. Just have to get rid of certain eating fears.Most of us look at roe as bait. I eat many different roes from salmon to mullet,to carp roe.Its all good.Even the sperm sacks from salmon are good.I didnt get to weigh 320 lbs from fruits and veggies....

A few people that were on the dock at Dash Point when I was there, were going to eat the Pinks eggs. That was something interesting.

My experimitting days are long over for a spell.I grew up on fish and allthough I eat it from time to time I'm not venturing too far from chicken.Everything is pretty good if its prepared well.Just have to be willing to try.I didnt get to weigh 320 eating diet food all dem years. Hehehe

Toni,
a crepe is basically a very thin pancake. Just add more milk to your batter so that the pancakes are very thin in the pan, nearly the consistency of the milk and you have crepes is essence.
You will just need enough of the batter to make a thin layer on a hot pan.

About a quarter of a century ago I made crepes.
I did make some smoked salmon alfredo. I got the sauce out of a jar. I think I will make it from scratch next time.
